Samosas are a delectable Indian dish with endless possibilities when it comes to fillings. We make ours with a healthier twist! Instead of frying these savory pastries, we bake them!
Baked Samosas
Ingredients
- 1 lb ground beef
- 2 stalks of celery sliced and diced
- 2 cups sweet potato diced into small cubes
- 1 cup water
- 2 cups chickpeas rinsed and drined
- 1 cup frozen peas
- 2 tsp garlic salt
- 1 tbsp India fennel
- 2 tbsp curry
- 1 tsp ground turmeric
- 10 egg roll wrappers
Instructions
- In a skillet over medium heat, brown ground beef and add celery. Cook until celery is slightly translucent. Reserve cooked meat mixture in a bowl.
- In the skillet over high heat, add sweet potatoes and water. Cook until sweet potatoes are slightly softened.
- Reduce heat of skillet to medium-low. Add chickpeas to sweet potatoes and slightly mash with a fork.
- Add peas to the mixture, then add ground beef mixture.
- Combine spices into the mixture and stir well. Remove from heat.
- Preheat oven to 425°F.
- Slice egg roll wrappers in half diagonally and reserve a small ramekin of water to help “seal” the samosas.
- Place one half of an egg roll wrapper in the palm of your hand, with the 90° angle pointed downward toward your wrist. Using a finger, line one edge of the wrapper with water. Fold the wrapper into a cone shape taking the long edge of the triangle toward the middle of the wrapper and overlap the two sides. Pinch this to close and keep the top open for the filling.
- Spoon in meat mixture until just below the top of the cone, then fold the top flap of the wrapper down. Seal with a dab of water.
- Place the samosa seam side up on a slightly greased baking sheet. Repeat until all filling is used. Spray or brush tops of samosas with olive oil.
- Pro Tip: Samosas may be frozen (cooked or uncooked) and enjoyed later!
- Place samosas in the oven for 15-20 minutes or until slightly golden brown and crispy.
- Remove from oven and allow to cool for 3-5 minutes. Enjoy!
