Beat eggs in a shallow bowl and add pepper sauce.
Add salt and pepper to the flour in a shallow bowl and stir to combine.
Crush crackers and place in a shallow bowl or plate.
Breading the steak: Place one steak in the egg and coat both sides. Allow excess egg to drip off. Then dredge steak lightly through the flour, back into the egg and finally, in the crackers. Be sure to coat both sides of the steak liberally in the crushed crackers.
Sit steaks aside and allow to rest for 5 minutes while you preheat the oil on high in a large skillet.
When oil is hot, place one strip of steak in your skillet. Avoid overcrowding if frying multiple steaks at once.
Allow to cook 3-4 minutes, then turn steak and reduce heat to medium. Cook another 3 minutes, then remove. Repeat process with remaining steaks.
