In a large bowl, mix oatmeal/flour, salt, and baking powder.
In a separate bowl, beat eggs. Stir in milk and butter. Pour milk mixture into the flour mixture and beat until blended. Allow to rest 10-15 minutes while preparing vegetables.
Warm olive oil in a small skillet. Add bell pepper, garlic and mushrooms and cook over medium heat until soft and liquid is absorbed. Add corn and stir to warm and combine.
Add mushroom mixture to batter. Add jalapenos, and cheese to the batter. Ladle batter into a preheated waffle iron on highest heat setting. Cook until golden, about 8 minutes.
