Savory Waffles

Ingredients

  • 2 cups Oatmeal finely ground in food processor (can use flour)
  • 1 tsp Salt
  • 1 tbsp Baking powder
  • 2 Eggs
  • 1 ½ cups Milk
  • 3 tbsp Butter melted
  • 3 tbsp Olive oil
  • 2 Garlic cloves chopped
  • ½ cup Red bell pepper diced
  • 8 Mushrooms diced
  • ½ cup Corn fresh, canned or frozen
  • 1 Jalapeno diced
  • ½ cup Shredded cheese

Instructions

  • In a large bowl, mix oatmeal/flour, salt, and baking powder.
  • In a separate bowl, beat eggs. Stir in milk and butter. Pour milk mixture into the flour mixture and beat until blended. Allow to rest 10-15 minutes while preparing vegetables.
  • Warm olive oil in a small skillet. Add bell pepper, garlic and mushrooms and cook over medium heat until soft and liquid is absorbed. Add corn and stir to warm and combine.
  • Add mushroom mixture to batter. Add jalapenos, and cheese to the batter. Ladle batter into a preheated waffle iron on highest heat setting. Cook until golden, about 8 minutes.
