Blueberry Scones

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 ¼ tsp baking powder
  • ¼ tsp salt
  • 2 tbsp butter slightly softened at room temperature
  • 1 tbsp butter melted and reserved
  • cup milk
  • 1 egg room temperature
  • 1 cup fresh or frozen blueberries

Instructions

  • Preheat oven to 375°F.
  • In a medium-sized bowl, combine flour, sugar, baking powder and salt. Break butter into small pieces or use a pastry cutter to add butter to the dry mix.
  • In a separate, small bowl, whisk together egg and milk.
  • Add wet ingredients into dry mixture and work dough into a ball.
  • Place dough onto a lightly floured surface and gently knead in blueberries.
  • Work the dough into a circle about 3/4-inch thick.
  • Cut dough into 8 wedges and place on a greased baking sheet. Brush the top of the scones with a small amount of melted butter.
  • Bake at 375°F for 15-20 minutes until golden brown. Remove from oven and place on cooling rack.
  • Best enjoyed warm with a side of creamy cold brew coffee!
