Tomatillo Salsa

Ingredients

  • 12 tomatillos
  • ½ onion chopped
  • 8 garlic cloves
  • 1 tbsp olive oil
  • 1 jalapeno seeded to heat preference and chopped
  • ½ cup cilantro leaves
  • 1 lime juiced
  • salt to taste

Instructions

  • Set oven to broil.
  • Slice tomatillos in half and place face down on baking sheet. Add garlic and onions to the baking sheet with tomatillos.
  • Spray or brush vegetables with olive oil.
  • Place vegetables in oven for 10-15 minutes, until slightly roasted and translucent.
  • Remove from oven and allow 5 minutes for vegetables to cool.
  • In a blender, combine vegetables and juices from the baking sheet, jalapeno, cilantro, lime juice and salt. Pulse intermittently to desired consistency.
  • Pour salsa in a bowl and enjoy warm or cold with fresh baked tortilla chips.
