Versatile Pasta

Ingredients

  • 4 oz pasta dry
  • 2 tbsp olive oil divided
  • 12 oz chicken sausage link sliced in 1/4″ rounds
  • 1 bell pepper chopped
  • 6 oz asparagus finely chopped
  • 4 oz frozen corn
  • ½ pt cherry tomatoes
  • 2 oz spinach raw
  • 4 oz feta cheese crumbled

Instructions

  • Bring 4 quarts of water to boil in a large pot and cook pasta according to the package instructions. Drain and reserve pasta for later use.
  • While pasta is cooking, heat 1 tablespoon of oil over medium heat to a large skillet and add sausage. Cook thoroughly and until bits of the sausage begin to brown.
  • Remove sausage from the skillet and reserve in a dish.
  • Add the bell peppers and asparagus to your large skillet and cook until tender over medium heat.
  • Add corn and heat through.
  • Add back in your cooked sausage, along with the cherry tomatoes and spinach. Stir to combine.
  • Add feta cheese and cooked pasta. If needed, add remaining tablespoon of oil to pasta dish to help create creamy texture.
