Charred Corn Salad
Ingredients
- 1 cup corn kernels fresh or frozen
- ½ pt cherry tomatoes halved
- 1 small avocado diced
- ½ lime juiced
- 1 chipotle pepper in adobo sauce minced
- 1 tsp honey
- ¼ tsp salt
Instructions
- Heat skillet over medium-high heat and add corn. Stir frequently until charred – about 10 minutes.
- In a medium sized bowl, combine lime juice, honey and chipotle pepper. Whisk to combine.
- Remove corn from skillet. Add corn, tomatoes and avocado to the dressing and stir to combine.
- Salad can be served warm or chilled. Also makes a perfect topping for grilled hot dogs.
