Charred Corn Salad

Ingredients

  • 1 cup corn kernels fresh or frozen
  • ½ pt cherry tomatoes halved
  • 1 small avocado diced
  • ½ lime juiced
  • 1 chipotle pepper in adobo sauce minced
  • 1 tsp honey
  • ¼ tsp salt

Instructions

  • Heat skillet over medium-high heat and add corn. Stir frequently until charred – about 10 minutes.
  • In a medium sized bowl, combine lime juice, honey and chipotle pepper. Whisk to combine.
  • Remove corn from skillet. Add corn, tomatoes and avocado to the dressing and stir to combine.
  • Salad can be served warm or chilled. Also makes a perfect topping for grilled hot dogs.
